No simmer setting, enamel coating is bubbling up

This is a nice stove, but was disappointed that the gas setting did not include a simmer. It has high, medium, and low, but the low still has a somewhat high flame, and you can’t lower it to a small flame. Rice bubbles too high and so do soups and sauces, making it cumbersome to move the pot you’re cooking with away from the flame. I’m very disappointed in the black enamel coating on top of the stove. It is beginning to bubble. At first I thought I didn’t clean up a grease mark around the burners, but after careful inspection, it wasn’t grease, but the enamel bubbling up. I bought this stove a couple of months ago. What will it look like after a couple of years? I thought Maytag was a quality product, that’s why I purchased it, but I’m not so sure anymore.

We got this unit at an appliance center's clearance for about half price. Really heavy duty range and it works great. It is like a commercial range. Large oven and the wet self-cleaning feature works well. Very pleased with the purchase.
